    • 1 bunch of tarragon;
    • 1 tbsp. l seasonings for fish;
    • 2 tbsp. l peanut butter;
    • 2 tbsp. l sesame oil.

Prepare the fish. If it is in the freezer, first defrost it. To do this, it is better to leave the fish overnight in the refrigerator. If there is not much time, thaw the fish at room temperature. So that the taste of fish fillet does not deteriorate. Do not thaw it in water.

Sift the cornmeal. Put it in a large bowl. Put the salmon there and mix well.

Prepare the garlic. To do this, peel 2 cloves of garlic and cut them into thin plates. Wash the pepper well, remove the seeds and chop finely with a knife. Peel the ginger root and chop into small strips. Wash the tarragon and mint thoroughly, dry it slightly and chop finely and finely. Wash the green onions, dry and cut into ringlets.

Heat the pan over high heat. Pour 1 tablespoon of sesame and peanut butter into it and fry the fish until golden brown on high heat. Turn the pieces over and fry on the other side. In order to brown each side, three minutes is enough.

Remove the fish from the pan and place on a plate. Put the pan on the fire, pour the remaining oil into it and fry the garlic and ginger in it for 1 minute. Then add pepper and spring onions. After 1 minute, add sugar, soy and fish sauce, chopped peppermint and tarragon to the pan. Sprinkle all the seasoning for the fish. Stir well and fry for another 1 minute.

Remove the pan from the heat. Pour the pieces of salmon with the resulting sauce and serve.

To avoid poisoning and buying low-quality goods, buy fish in specialized stores that have the necessary conditions and certificates for the sale of seafood. When buying salmon fillet, pay attention to the fact that fresh salmon does not have a pronounced fish smell. Do not forget that a filet of good quality has an elastic elastic structure.
