Add oatmeal, yeast and egg to the cooled mashed potatoes. Knead a not very cool dough, it should stick a little to your hands. Leave to rest for 15-20 minutes.

Lay parchment paper on the table, grease with sunflower oil, take a piece of dough and sprinkle a little flour on top.

Mash the dough a little on paper, cover with cling film and roll the rolling pin into a thin layer.
