On the night of December 24-25, Catholics from different countries celebrate Christmas. Traditionally, this day is customary to spend with your family and arrange a festive dinner consisting of Christmas dishes. In each country they have their own: in some they serve stuffed birds, and in others - carp, black pudding or ham. A Christmas table is not complete without sweets. For example, in Denmark it is customary to cook rice porridge with raisins and cinnamon, and in England rum pudding.

You will need

  • For baked carp "Christmas on the doorstep":

  • -1 carp (about 1, 2 kg);

  • - 350 g of onions;

  • - 250 g of champignons;

  • - 250 g of walnuts;

  • - 2 tomatoes;

  • - parsley;

  • - vegetable oil;

  • - lemon;

  • - ground black pepper;

  • - salt.
  • For Christmas Pudding:

  • - 500 g of dark raisins;

  • - 200 g pitted prunes;

  • - 200 g of cinnamon (very fine raisins);

  • - 100 g of dried figs;

  • - 100 g of a mixture of dried fruits;

  • - 125 ml of whiskey;

  • - 100 g of dark brown sugar;

  • - 4 eggs;

  • - 180 g butter;

  • - 300 g of flour;

  • - ½ tsp baking powder;

  • - 2 tsp ground cinnamon;

  • - 2 tsp ground nutmeg;

  • - 1 tsp ground ginger;

  • - rum.

Baked carp "Christmas on the doorstep"

Wipe the champignons thoroughly with a damp cloth and cut into small pieces. Peel walnuts and chop with a knife or crush in a mortar. Peel onions, cut into small cubes and fry in vegetable oil along with finely chopped mushrooms. Then add chopped walnuts and chopped parsley. Salt and pepper to taste.

Clean the carp, rinse well under running water, grate with a mixture of salt and ground pepper and start with minced meat made from mushrooms, onions and walnuts. Then sew the abdomen of the fish with a thread.

Put the carp in a fireproof baking dish. Make small incisions along the back and put a slice of lemon in each. Lubricate the fish with vegetable oil, pour a little water into the mold and place in the oven heated to 200 ° C for 30 minutes.

Carefully remove the thread from the finished carp and decorate the fish with sprigs of parsley and slices of lemon and tomatoes before serving.

Christmas pudding

Mix all dried fruits with whiskey and set aside for a while, sometimes stirring, until the dried fruits absorb all the liquid. Then add ground ginger, brown sugar, eggs and mix.

Melt the butter over low heat, then cool to room temperature and mix in the dried fruit mixture.

Sow wheat flour, combine it with dry ingredients: baking powder and ground spices. Then add the dry mixture to the dried fruit and mix well.

Special forms for pudding grease and sprinkle with flour. Then fill them with the prepared mass (not to the brim) and smooth the surface. Cover and wrap the forms with wax paper and foil.

Place the pudding molds in a water bath, reduce the heat to a minimum and cook for about 6 hours, remembering to pour water from time to time.

After this time, let the pudding cool completely, remove the foil and paper, cover with a new layer of paper (preferably two), cover with a cloth or foil. Tie again and place in a cool place.

To make the Christmas pudding soft, before serving it again, put it on the steam bath for an hour and a half.

Turn the finished Christmas pudding onto a serving platter. Pour over rum, set it on fire and bring to the table burning.

Baked carp is a traditional Czech Christmas dish. There is a belief there: if you save a couple of scales from the Christmas carp and carry them in your wallet, then next year there will be plenty in the family.

Useful advice

When cooking, the pudding rises and increases in volume, so wrapping the forms in wax paper and foil should not be very tight, making small folds.
