  • For cream:

  • - 400 ml of fat cream;

  • - 2 tbsp. tablespoons of powdered sugar;

  • - 2 tbsp. tablespoons of coconut liquor.

Lamb with coconut

Finely chop the coconut; grate the ginger root on a fine grater. Pass the garlic through a press, clove and bay leaf, crush in a mortar. Chop the onion and fry in warmed vegetable oil until transparent. Add chopped bay leaves and cloves, mustard seeds, chili, turmeric, coriander, garlic and ginger to the onion. Add coconut and warm the mixture over low heat.

Wash mutton not too fat, dry and cut into cubes. Put the meat in a pan, increase the heat and, stirring, fry until golden brown. Pour in boiling water, cover the pan with a lid and simmer the mutton for 35-40 minutes. Add salt and freshly ground black pepper at the end.

Coconut Cookies

Put butter in a bowl and place it in a pot of boiling water. Add sugar and, stirring, melt the mixture until smooth. Peel the coconut, cut the pulp into pieces and chop in a blender. Remove the bowl of melted butter from the heat and pour coconut puree into it. Stir, add salt and sifted wheat flour. Knead the soft dough.

Blanched peeled almonds in boiling water, remove the hard peel from the kernels. Roll small balls from coconut dough, put almonds in the center of each. Roll the products in coconut flakes and place on a baking sheet covered with baking paper. Place the cookies in the oven, preheated to 180 ° C. Bake for about half an hour, then remove the items and refrigerate on a wire rack.

Coconut Muffins

Sift flour. Pour it into a bowl and mix with baking powder, salt and coconut. Beat eggs with sugar in a separate bowl. Melt the butter and pour it into the egg mixture. Add yogurt and mix well. Pour the flour mixture in portions, carefully rubbing the lumps.

Sort strawberries, rinse and dry. Cut the berries into pieces and add them to the dough. Gently mix it from top to bottom and place it in muffin tins. To make finished products easier to get, paper sockets can be inserted into the molds. Fill the dough with no more than 2/3 of the volume, as the products rise during baking. Place the muffins in the oven, preheated to 200 ° C, and bake for about 25 minutes, then remove and cool on the board.

Whip the chilled cream into a thick foam with powdered sugar. At the end of whipping, add coconut liquor to the cream. Using a confectionery syringe, pour the magnificent "caps" of cream onto the muffins and sprinkle them with sugar beads.
