To cook pancakes on sour cream according to all traditions, three things are necessary - a good frying pan, high-quality vegetable oil and the right recipe for dough. The pan should be either cast iron or modern and with a non-stick ceramic coating. Oil for frying must be preheated in a frying pan and only then put fritters on it - otherwise they will have a weak roast and an unappetizing pale appearance. You can cook dough for traditional pancakes with or without eggs - to make the dough more airy.

For the preparation of lush pancakes, it is recommended not to use yeast, but ordinary kefir, which is more useful.

Also in the dough you can add various natural ingredients that are not provided for in the recipe - for example, grated vegetables or fruits (zucchini, apples and so on). Also, real Russian pancakes can be prepared using cottage cheese and other products suitable for this. A prerequisite for the traditionalness of the dish is the consistency and type of dough - it should be liquid and rich. Spread it on the pan with a spoon, which is pre-wetted in cold water - so the dough will not stick. Before serving, hot sour cream pancakes should be laid out on a napkin to remove excess fat from them.

Recipe

To prepare traditional Russian pancakes in sour cream, take 100 g of flour, 0.5 cups of sour cream, 2 eggs, 3 tbsp. sugar, ¼ tsp soda and ½ tsp salt. Break the eggs into a small bowl and beat thoroughly with a fork or mixer, then add sour cream to the resulting mixture and mix everything thoroughly until a homogeneous mass is obtained. Then mix the flour with sugar, soda and salt in a separate bowl, pour the egg and sour cream mixture into them and mix the contents of the bowl thoroughly until a dough is obtained.

To give sour cream pancakes a piquant sourness, you can add a small amount of any berries with a sour or sour-sweet taste to the dough.

Pour the vegetable oil into the pan and heat it as much as possible, then soak a tablespoon in cold water and begin to carefully spread the pancakes on the hot surface of the pan. Fry fritters for two minutes on each side. Serve the finished dish to the table with honey, sour cream or your favorite jam, as well as fresh berries that will decorate the pancakes and make them even tastier and healthier.

If desired, you can cook pancakes with apples - for this, dilute 25 g of yeast in 2 cups of warm milk, add 2 eggs, 1 tbsp. sugar, 0.5 tsp salt, mix everything and add 0.5 kg of flour to the mixture. Cover the dough with a towel, wait for the fermentation, then cut the apples into thin circles and mix them with the dough. After this, pour the finished dough into the pan, frying the pancakes on both sides - if desired, apple circles can be placed on top of the frying pancakes. Sprinkle the finished dish with sugar and serve.
