Delicious lean apple muffins

Ingredients for lean apple muffins with dried apricots:

- flour 200 g;

- sugar 100-150 g;

- cinnamon 1 teaspoon;

- baking powder 1.5 tsp;

- vegetable oil 4 tbsp. spoons;

- homemade applesauce 250 g;

- dried apricots: 150 g;

- a pinch of salt;

- icing sugar.

The recipe for lean apple muffins with dried apricots is very simple.

First you need to cook homemade applesauce. To do this, you will need a baked apple and a sieve. You need to take large, moderately juicy apples, cut them in half, clean the core and bake in the oven over medium heat until cooked. Rub the apple pulp through a sieve until a homogeneous mass is obtained.

Instead of homemade applesauce, you can use ready-made baby purees.

Rinse the dried apricots well and chop finely. Sliced ​​dried apricots should be dried on a paper towel. Producers often process dried fruits with special mixtures so that they are well preserved and not spoiled during transportation. It is best to first pour dried apricots with boiling water, hold for several minutes, then rinse under running water. Then let stand for another 15-20 minutes in cold water and rinse well again under running water.

Sift flour twice. In a large bowl, mix the sifted flour, sugar, salt, baking powder, cinnamon and chopped dried apricots. Mix pre-prepared homemade applesauce with vegetable oil. Gently mix the mixture of apple and sunflower oil with dry ingredients and mix thoroughly.

Grease cupcake tins with vegetable oil and sprinkle with flour. Preheat the oven to 180 degrees. Arrange the dough in tins and bake for about 30 minutes.

The cake pan must be filled no more than 2/3 of its volume, since the cupcakes rise during baking.

Cupcake readiness can be determined using a wooden stick or toothpick. Ready cupcakes, still hot, sprinkle with powdered sugar and let cool.
