In a pan, boil slightly salted water. We clean and wash the stomachs as thoroughly as possible, put them in a pot of boiling water, bring to a boil again on high heat, remove the foam, reduce the heat to medium and cook for 30 minutes.

At this time, we process chicken hearts - cut off the upper part with vessels and fat, rinse thoroughly. 30 minutes after the start of gastric cooking, add hearts to them, cook another 20 minutes.

After 20 minutes, put the cleaned and washed liver in a pan, cook for another 7-10 minutes. Hearts and stomachs should be very soft, but you need to ensure that the liver is not digested.

Peel and chop the onion as finely as possible. Melt the butter in a frying pan with a thick bottom, fry the onions on a minimum heat until saturated golden color, but make sure that it does not burn.

We merge the broth, let the giblets cool down a bit, chop them with a heavy knife, but not very finely. Mix the giblets with fried onions, salt and pepper to taste. Divide the dough into 2 parts: 1/3 and 2/3. We roll out most of it so that it covers the bottom and the walls of the mold, hanging slightly from the edges. We spread the filling into the mold, wrap the edges of the dough inside the mold so that it slightly covers the filling. Roll out the second part of the dough and cover the cake, pinching slightly the edges.

We make small holes in the cake for steam to escape, grease with yolk mixed with a small amount of water. We send the cake to the oven preheated to 180 degrees, bake for 30-40 minutes. Serve the cake in a warm or cooled form.
