Shrimp and Mushroom Soup
Try making a simple and nutritious creamy soup with champignons and shrimps. To do this, you will need:
- 250 g of peeled shrimp;
- 1 large onion;
- 500 ml cream;
- a pinch of grated nutmeg;
- 1 tablespoon of sugar;
- 150 g of champignons;
- 0.25 glasses of dry white wine;
- several branches of cilantro;
- lemon juice;
- salt to taste;
- vegetable oil for frying.
Chop the onion. Pour some vegetable oil into the pan and stir, fry the onion in it until transparent. Pour sugar in a saucepan and pour the wine, mix. Simmer the mixture on fire for about 3 minutes. Wash the mushrooms, dry and cut into plastics. Put them in a pan, fill with cream, add grated nutmeg. Bring the mixture to a boil and cook for a few minutes. Then dilute the soup with water to the desired density.
Instead of water, soup can be diluted with chicken or vegetable broth.
Bring the mixture to a boil again, put the peeled shrimp in the pan, add a little lemon juice and salt. Reduce the heat and cover the soup with a lid. Cook it for 5 minutes, then remove from heat and pour on plates. Sprinkle each serving of finely chopped cilantro before serving.
Shrimp Cheese Soup
Soup according to this recipe can be prepared in a quarter of an hour.
You will need:
- 1.5 liters of water;
- 4 medium-sized potatoes;
- 1 carrot;
- 150 g of processed cheese type "Amber" in a jar;
- 300 g of unpeeled shrimp.
Boil the shrimp for 5 minutes. Take them out with a slotted spoon, clean. Cut the potatoes into small cubes, grate the carrots. Put the potatoes in the shrimp broth, after 5 minutes add the carrots to it. Boil vegetables until soft.
Add cream cheese and shrimp to the pan. Cook the soup for another 3-4 minutes. Then pour it into plates and serve with homemade croutons of white bread.
