To prepare the dough, you must first dilute the yeast in water with sugar. Water can be taken at least 30 ml. If you dilute the yeast in a concentrated sugar solution, they may lose their properties. Water should be warm, but not hot. After 10 minutes, you can start making dough.

Put flour in a deep bowl. It is better to pre-sift it through a sieve for enrichment with oxygen. Dough on such flour will be better suited. Pour a mixture of water, sugar and yeast into the bowl, half the olive oil, add a little salt and stir, add new portions of water. The dough should be elastic, but soft, not too dense. When it is possible to achieve the desired consistency, wrap it in film and put it in a warm place. After 30 minutes, knead well, form a ball and roll out. So that the dough does not stick to the rolling pin, it is convenient to sprinkle the surface with working flour. Put the dough in a special pizza baking dish.

Grind the tomatoes with a blender. It is preferable to make cross-shaped incisions in the area of ​​the stalk, scald with boiling water, and then peel. Put tomato puree in a stew-pan, add the remaining half of olive oil, some spices. Dried Italian herbs are ideal for pizza. The taste of tomato sauce is well emphasized by oregano. Cook the sauce on very low heat for 5-8 minutes.

Put tomato sauce on rolled dough, but cool it a little before. You can put very thin circles of tomatoes on the sauce. Finely grate Parmesan and sprinkle pizza.
