Cooking:

  1. Rinse capelin under cold water and allow water to drain. You can blot washed fish with a paper towel. Clean the fish, gut the insides, tear off the head. Then sprinkle with salt and mix gently so that the capelin is slightly salted.
  2. Pour warm water into a bowl of medium depth, then dissolve the yeast in it, beat eggs one at a time, add a little salt and a pinch of sugar to ferment the yeast. Mix the whole mixture thoroughly.
  3. After that, add a little flour and knead the mixture until smooth. The dough should be a consistency of not too thick sour cream. Let the dough stand for a while. When the batter increases slightly in volume, mix it well again.
  4. Pour a large amount of vegetable oil into the pan so that the fish floats in it and heat it. Each fish should be taken by its tail, dipped in batter and dipped in heated oil, making sure that the fish bathed in oil. The fire should not be too strong for the capelin to fry inside the batter.
  5. When the fish has turned golden, it is removed from the deep fat and spread on napkins or paper towels to get rid of excess fat
