Pork BBQ marinade
The ingredients you will need:
- 100 g of soy sauce;
- 10 g of mustard;
- 5 g of sugar;
- 1 g of citric acid;
- 1 g of crushed black pepper.
Cooking pork barbecue marinade
Mix soy sauce with mustard (if using sweet mustard, reduce the amount of sugar given in the recipe). Add spices, let it brew for about 6-7 minutes, and then strain through cheesecloth, folded in several layers. An important point: there should not be any solid particles in the barbecue marinade. Otherwise, the pieces of pork will be burned, and the kebab may be spoiled.
Lamb kebab marinade
The ingredients you will need:
- 100 g of vegetable oil;
- 30 g of lemon juice;
- 6 g of sumac;
- 4 g of sea salt;
- 2 g of star anise;
- 2 g of crushed black pepper.
Cooking lamb kebab marinade
Squeeze the juice from the lemon, be sure to strain it if the seeds are caught - they can be bitter. Pour vegetable oil into the juice, dissolve sea salt in this mixture. Tie up sumakh, star anise, crushed black pepper in cheesecloth and dip in marinade. Put on a small fire, heat to 60-80 degrees, let cool. After cooling completely, remove the gauze with spices by squeezing the liquid fraction. According to many cooks, this is the best marinade for lamb shish kebab.
Chicken BBQ marinade
The ingredients you will need:
- 50 g of vegetable oil;
- 50 g of soy sauce;
- 10 g of honey;
- 5 g of fresh ginger juice;
- 5 g of garlic;
- 1 g of citric acid.
Cooking chicken skewers marinade
Rub a piece of ginger root. Pass a few cloves of garlic through a press. Squeeze the juice out of them. Stir with honey, adding vegetable oil dropwise. A homogeneous emulsion with a consistency resembling liquid mayonnaise should be obtained. Dissolve citric acid in soy sauce so that no visible crystals remain. Combine both mixes. If you use unsalted soy sauce - you can add a little sea salt to the chicken barbecue marinade.
