  • - 2 glasses of thick cream;

  • - 1/2 cup sugar;

  • - 250 g cream cheese;

  • - 1 glass of sour cream;

  • - 1 lemon;

  • - 1 sachet of gelatin;

  • - 1 tsp vanillin.

Grind cookies into small crumbs using a food processor or meat grinder. Put the crumbs in a large bowl, add granulated sugar and mix. Melt the butter over low heat and pour it to the ingredients. Form a homogeneous mass, it should be moderately sticky.

Take a baking dish and grease it with vegetable oil. Put the mass of butter and cookies in a mold and tamp well on the base, make low sides. Preheat the oven to 190 degrees and put in it a mold with the base for the cheesecake, bake for 10-12 minutes until golden. Remove from the oven and cool.

Prepare the filling for the lemon cheesecake. Take a saucepan and pour half a glass of thick cream into it, put on a small fire. Next, add gelatin to the cream, mix thoroughly. Boil the mixture for two minutes, reduce heat. Add the remaining cream, vanilla and granulated sugar, cook for another 5 minutes, stirring constantly.

Cool the mixture, then put cream cheese and sour cream in it. Peel the zest from the lemon and squeeze the juice, add to the rest of the ingredients. Beat the creamy mass in a blender until a lush, uniform consistency. Fill the base with creamy lemon mass, put in the refrigerator for 2 hours. After time, remove the dessert from the refrigerator and serve.
