Chop red chili pepper finely and crush the garlic cloves.

Preheat the oven to 180 degrees. Put the chicken in a small dish. Combine ginger and soy sauce, chopped chilli, crushed garlic and sesame oil in a jar. Pour over the chicken and roll the meat well in a mixture of sauces.

Mix the flour and sesame on a plate and roll the chicken pieces in this mixture so that they are completely covered with flour and sesame.

Heat vegetable oil in a thick-bottomed pan. Put the chicken pieces and fry, turning, 6 minutes until golden brown on all sides.

Transfer the fried chicken into a baking sheet. Cover with foil and cook in the oven for 15 minutes. Remove the foil and cook for another 15 minutes until a clear juice comes out when pierced from the chicken. The dish can be served both hot and cold.

Useful advice

Ginger sauce is sold in the department of spices or sauces in supermarkets. It can be replaced with half a teaspoon of ground ginger.
