Choose not too big pumpkin - they are much sweeter and their pulp is not so fibrous. It is also not worth taking a pumpkin too small - there is not enough pulp in it. An exception is squash squash, even the peel is edible in them, but seeds are inedible. On a good pumpkin there are no spots, traces of bumps, mold. It has a dry stem and a hard wax shell, when you knock on a mature pumpkin - it makes a dull sound. The pumpkin season begins at the end of summer and lasts until the beginning of autumn, and you can also keep the vegetable untouched until winter.

Wash and dry your vegetable. Trim the top of the pumpkin, the one with the “tail”, passing around it, closer to the stem, with a sharp knife. Pull the tail and remove the top. Use a spoon to remove the fibers and seeds. Cut the pumpkin in half and once again go over it with a spoon. Set the seeds aside; you'll still need them.

Cut the pumpkin into several large slices. Prepare dishes with vegetable oil, cover the baking sheet with baking paper, remove the spices. You can season the pumpkin with chopped garlic, fresh or dried leaves of thyme, rosemary, sage, sprinkle it with sea salt, pepper, cinnamon or brown sugar, and dip it not in vegetable oil, but in honey or maple syrup.

Dip the pumpkin slices in oil or syrup / honey, lay on a baking sheet in one layer and sprinkle with herbs and spices to taste. Place the baking sheet in an oven preheated to 200 ° C for 20-30 minutes, depending on the thickness and length of the slices.

Fried pumpkin can be served as a side dish, it can be put in salads, used in mashed potatoes and soups, bake various pies, cookies, muffins and so on with it. In a pumpkin of medium size, only the flesh is edible, in small pumpkins, as a rule, you can eat and baked peel.

Pumpkin seeds can be fried in a pan. To do this, they should be freed from the fibers, rinse well and leave overnight, spread out in a thin layer on a disposable paper towel, to dry.

Warm a large, best cast-iron pan or another, with a thick bottom, and put pumpkin seeds on it. Fry them constantly stirring. When the seeds turn golden, begin to burst and give off a pleasant aroma, turn off the heat. Pumpkin seeds can be seasoned with salt, garlic or onion powder, cayenne pepper. If you like very salty seeds, then do not rely on the salt that you sprinkle them on, but rather soak the seeds in a solution of 4 tablespoons of salt in 1 cup of water. Keep them in brine for at least 12 hours, then dry and fry.
