With prolonged storage, the honey hardens, i.e. it is candied. The cause of this process is the crystallization of glucose and sucrose. But to return to its former liquid state is not difficult and is unlikely to take much time.

If you have a room with a high temperature (at least 35 degrees), turning honey back into liquid is quick and easy. Leave it in a warm room for several hours, and gradually it will get its original appearance. For this method of liquefying honey, a bath, for example, is perfect. But it is worth considering that the temperature in it is too high, so the process will go quickly. After 15-20 minutes, honey should be removed to a cooler room.

If there is no hot room, then we apply the following method. Transfer the honey to a small glass jar (approximately 2 liters) or pan. If you use a can, you will need two pots of different sizes. The jar needs to be installed in a smaller pan. Take the second pan larger than the first (and larger banks) and pour water into it to a level slightly below the middle.

Put a large pan on the fire, wait for the water to boil and put a smaller pan with honey on top of it (or an empty pan in which you want to place the jar). The handles of a small pan should hold it on the large rim. Make sure that the bottom of the smaller pan does not touch boiling water. Thus, honey will be heated gradually, due to boiling water and hot steam. A water bath allows you not to burn honey when heated, it does not burn and does not overheat (the temperature when using a water bath is several times lower than when heated on a fire).

Reduce the heat to a minimum. It is important to remember that with this method of liquefying honey, it cannot be heated to more than 50 ° C, otherwise it will begin to lose its beneficial properties. Continue to warm the honey in a water bath until a liquid state is obtained. Do not keep honey in a water bath for hours - it is better to heat it in small portions, this way you will reduce the heating time and preserve its useful properties.
Useful advice
When using a water bath, it is important not to keep the pot on maximum heat - the temperature may be too high for glass and fatal for the beneficial properties of honey.
