Potato roll with minced chicken is an excellent snack dish. It is prepared from inexpensive products available for any wallet, and it looks very impressive and can decorate not only everyday, but also a festive table.

    • 1 kg of potatoes;
    • 400 g chicken;
    • 2 eggs;
    • 50 g of fat;
    • 1 tbsp ground crackers;
    • 1 onion;
    • salt;
    • ground black pepper;

Peel the potatoes, wash and boil. Drain the water, and keep the pot and potatoes for a little while over low heat or in the oven to allow the remaining water to evaporate.

Wipe the potatoes through a sieve or crush with a wooden pestle. Then salt, add butter, eggs and thoroughly beat mashed potatoes.

Cut the chicken fillet into small pieces and fry in a pan with melted fat until a delicious crust forms.

Transfer the slices of fillet into a saucepan or stewpan, add a small amount of water, salt, add pepper, any spices to taste and bring to a boil. Then cover the dishes and simmer until cooked (about 15-20 minutes) over a low heat.

Remove the finished chicken fillet from the broth and pass through a meat grinder. Peel the onion, chop finely, fry in vegetable oil and add to the minced chicken. Pour into it a little broth in which the chicken was cooked, and mix everything thoroughly.

Dampen a clean towel or napkin with water and spread on a table. Put mashed potatoes on it and flatten with a spoon, giving the dough a rectangular shape.

Lubricate the surface with sour cream and put the minced chicken in the middle. Connect the edges of the potato dough with a towel and form a roll.

Lubricate the pan with fat / vegetable oil and transfer the roll to it from the towel so that the “seam” or the joint of the potato layer is at the bottom.

Beat the egg with sour cream and thoroughly coat the entire surface of the roll with this mixture, and then sprinkle with ground crackers.

Preheat the oven to 200 degrees and place a baking sheet in it. As soon as it is “browned”, remove the roll from the oven, cut into pieces and sprinkle with chopped herbs.
