    • 10 g vanillin
    • 3-4 tbsp. l cocoa
    • 150-200 g butter

Cooking biscuit:

Using a mixer, wipe the eggs with sugar into a lush foam. Pour flour slowly, whisking constantly. Put the resulting mass into a mold and bake for 30 minutes over medium heat. Allow to stand, cool and twist in a meat grinder. If desired, chopped nuts, lemon or orange zest can be added.

Cooking custard:

Put the butter in a warm place to soften. Erase eggs with sugar, add flour and starch, mix. Add milk, mix thoroughly, put a slow fire and cook, stirring constantly with a whisk. As soon as it begins to boil (bubbles begin to rise) - remove from heat. Pour vanillin into the resulting mass and continue stirring for a while. The cream must be allowed to cool. If time is short, you can cool in a "cold water bath" (put a pot of cream in a larger container with ice or cold water). Then beat with softened butter. Pour cocoa and beat thoroughly again so that there are no lumps left. Put a small part of the cream in a separate dish and cool (it will be used further for decoration).

In a biscuit crumb, gradually spread the cream and mix, the consistency should allow to sculpt from the resulting mass. Form cakes similar in shape to potatoes.

Transfer the chilled cream left for decoration to the confectionery syringe and decorate the cakes with “sprouts". Refrigerate for several hours.

You do not need to grease the sides of the baking dish, otherwise the dough can only rise in the middle.

The oven must not be opened for the first 20 minutes of baking!

Instead of a confectionery syringe, you can use a plastic bag in which you need to transfer the cream, cut one corner and squeeze through it.
