Beat eggs with sugar using a mixer. Then add the slaked soda in vinegar to the sour cream, mix thoroughly and pour into the egg mass.

Melt the butter in a water bath. Pour it into the mixture, stirring constantly.

Peel the bananas, mash them well with a fork until mashed and add to the bulk. They should be very, very ripe, and even better - ripe, that is, almost with a black skin.

Sift flour through a sieve two or three times, slowly pour into the mixture. Knead the dough quickly and thoroughly. It will turn out not very dense, about like thick sour cream.

After that, leave it to stand for ten to fifteen minutes. During this time, grease the muffin pan with butter. After the time has passed put the dough into molds, for convenience you can use a pastry syringe.

Then put the banana muffins in the oven for fifteen to twenty minutes. Do not forget that the cooking time may vary depending on the size of your molds.

Cupcakes rise instantly and brown as fast. Check one with a wooden speck or toothpick. If it comes out of it dry, then everything is ready.

Watch the baking carefully. Do not miss the moment when it is time to get the cupcakes, otherwise they can be dried.

Remove the prepared muffins from the oven and let them cool for five minutes in a mold, then remove them and cool completely on a towel or wire rack. If you leave the cupcakes to cool in shape, then their bottom will become wet due to the formation of steam.

Cook the caramel. Pour water into a small saucepan, add sugar, put it on medium heat and stir constantly until sugar is completely dissolved.
