Recipe "Potatoes fried with mushrooms."

If you cook from fresh forest mushrooms, then you must first cook them. Rinse the mushrooms well and cook in salted water for 1-1.5 hours. Then they must be washed well with running water and allowed to drain. If you use fresh champignons, then you do not need to boil them, just rinse and dry well enough. Canned mushrooms are also not boiled before cooking.

Peel, wash and chop the onions in half rings. Sauté it until soft.

If the mushrooms are large, then cut them smaller. In a pan with onions, add oil, put mushrooms and salt. Stir intensively, fry until a small golden crust appears and the water evaporates completely. When frying mushrooms, make a big fire. When they are ready, put them on a separate plate and cover. Turn off the fire, and do not pour out the oil remaining after frying.

Peel, wash, and cut the potatoes into thin rings or small cubes. After cutting the potatoes, wash them thoroughly with running water.

In a pan where mushrooms were fried with onions, add oil, put on a fire to heat. Once the oil begins to boil a little, put the chopped potatoes in the pan. Do not cover with a lid. The fire should be big enough.

Before forming a lower crust, stirring potatoes is not recommended. As soon as the crust has appeared, reduce the heat to medium and mix thoroughly. It is necessary to stir every 3-5 minutes so that the potatoes do not burn. For mixing, it is recommended to use a wooden spatula, so as not to wrinkle the chopped vegetable during cooking.

When the potatoes are almost cooked, put mushrooms with onions in it, after sprinkling them with 1 tsp of freshly squeezed lemon juice. Salt, add spices to taste. Mix well. And fry for another 5 minutes without changing the fire. For a better taste, you can add a season of black pepper peas and one piece of bay leaf.

Arrange the finished dish in serving plates, sprinkle with chopped herbs. It turns out very tasty and nutritious.
