Eggplant pie is often made in Turkey. Unusual filling gives the cake an amazing taste. It turns out very tasty, satisfying and tender.

- - 125 ml of water
- - 1 tsp salt
- - 350 g flour
- - 500 g eggplant
- - 100 g of Dutch cheese
- - 100 g Adyghe cheese
- - 100 g of cottage cheese
- - 2 eggs
- - 0.5 bunch of greenery
- - 1 tsp seasonings

First clean the eggplants and bake them in an oven, heated to 180 degrees, for about 20-30 minutes.

Start making dough. Mix warm water with olive oil, add flour, salt. Knead the dough.

Prepare the filling. Grate Adygea cheese, add cottage cheese, add finely chopped Dutch cheese, eggs, greens to taste.

Remove the eggplant from the oven, cool it and remove the pulp with a spoon. Mash with a fork and add the pulp to the filling, mix everything well, salt to taste.

Divide the dough into 2 unequal parts. Roll out most and lay in the mold. Put the stuffing on top. And cover with a smaller portion of the dough. Brush the cake with yolk.

Put the cake in the oven preheated to 180 degrees for about 45-50 minutes. Cut into triangles or squares and serve.
