Greek meatball soup is a great dinner for the whole family. It is light, satisfying and has an unusual taste. For its preparation you will not need exotic ingredients, all products can be found in the nearest store.

You will need

  • • 500 g of minced meat;

  • • 1 glass of rice;

  • • 3 eggs;

  • • 1 carrot;

  • • 2 medium heads of onions;

  • • 1 tbsp flour;

  • • 1 lemon;

  • • 2 liters of water;

  • • 2 tbsp chopped parsley;

  • • salt and black pepper;

  • • cooking oil for frying.

Peel and finely chop the onion, combine it with minced meat, 1 egg, rice, parsley, pepper, salt and 3 tablespoons of water. Mix the products well until a homogeneous mass is obtained, make small meatballs of them no larger than a walnut. Rice before cooking soup with meatballs should be soaked for 30 minutes in salted water.

Finely chop the second onion, fry in a pan with a little oil. Rub the carrots on a coarse grater and add to the onion. Fry vegetables well, transfer them to a pan and pour 2 liters of hot water, put on fire.

As soon as the water boils, gently fill the meatballs and leave to cook for 30 minutes. Make a lemon-egg dressing for meatball soup: take 2 eggs and separate the yolks and squirrels, whisk them separately. Squeeze the juice from the lemon and gently add it to the yolks. Pour this mixture into protein and gradually add the seeded flour. Stir the dressing gently so that there are no lumps left.

Pour the lemon-egg mixture into the soup and leave the pan on low heat for 2 minutes. Before serving, you can sprinkle the dish with herbs and cheese. Some housewives, to make the soup more satisfying, add potatoes and prepare the dish in pots in the oven.
