Prefabricated meat hodgepodge is not like any other first dish. Very satisfying and aromatic, it turns out to be tasty even when it has cooled down. A unique taste is given to her by a combination of ordinary products.

You will need

    • 500 g of beef on the bone;
    • 300 g of pork;
    • 2-3 chicken legs;
    • 500 g smoked meat (ham

    • 2 l of water;
    • 1-2 bulbs;
    • 1-2 carrots;
    • 2-3 tbsp tomato paste;
    • 2-3 pickled cucumbers or 5-6 gherkins;
    • 1/2 tbsp. brine;
    • pitted olives;
    • lemon;
    • cooking oil for frying;
    • salt
    • pepper
    • bay leaf to taste.

Rinse beef, chicken legs and pork under running water. Put in a large pot and, filling it with water, set to boil. When the water boils, reduce the heat to a minimum. Legs can be taken out after 30-40 minutes. Leave the beef and pork for another 1.5-2 hours, so that the meat is well cooked and soft. Season the broth with salt and pepper to taste.

Peel and wash onions and carrots. Chop the onion finely, grate the carrots. Pour some vegetable oil into the pan. Put onions and carrots and sauté them, stirring occasionally, for 4-5 minutes over medium heat. Add tomato paste and simmer for a couple of minutes until a characteristic sweetish smell appears. Cut pickles into thin strips. Put in a pan, mix and fry with onions and carrots for 1 minute.

Remove beef and pork from the broth. Cool. Smoked smoked meats and meat with thin strips.

Put the stewed vegetables, chopped smoked meats and meat into the broth. Add olives and ½ cup brine. Stir and cook over medium heat for 10-15 minutes. Throw a couple of bay leaves a couple of minutes before ready. Let the hodgepodge stand for 15-20 minutes, after which you can serve it to the table.

Put a slice of lemon in a serving plate, pour a hodgepodge. If desired, you can add sour cream to taste.

It is necessary to salt the broth quite a bit, since the composition of the recipe includes brine and the next day after cooking, when the hodgepodge is infused, it may turn out to be more salty.

Useful advice

If desired, prune can be added to the hodgepodge. To do this, it must be washed, finely chopped and added to the boiling broth along with frying and meat.
