- 600 g spinach
- 1 tbsp vegetable oil
- half onion
- 400 g potato
- 10 g butter
- 125 ml. milk for potatoes and
- 100 ml milk for omelet
- 6 eggs
- 20 g margarine
- salt
- pepper

To prepare this dish, it is best to take fresh spinach, but if you do not have one, you can also use frozen.

Rinse fresh spinach leaves well under running water and pat dry with a towel. Let frozen spinach thaw, drain excess liquid from it.

Peel the potatoes, cut them in half and set to boil in salted water.

Cut the onions into small cubes, fry in vegetable oil until golden brown. Add the spinach to the pan, continue to fry until its leaves fall into one solid mass. Add salt and pepper.

Drain the potatoes, take the crush, and mashed the potatoes by adding warmed milk.

Mix eggs with milk, season with salt, pepper. Fry the omelet from the egg mass.

Take a warm plate and put on it three identical heaps of spinach, mashed potatoes and scrambled eggs.

Spinach can only be eaten freshly prepared, in no case can it be heated.
