  • - hazelnuts - 150 g;

  • - egg - 1 pc;

  • - sugar - 4 tablespoons;

  • - cognac - 1 tablespoon.

Leave the butter at room temperature for a while. Thus, it will become soft. Then combine the softened butter with 2 teaspoons of flour. Stir the resulting mixture and refrigerate.

Pass the remaining flour through a sieve and put on a work surface in the form of a slide. Then make a recess on it. The following products should be placed in it: water, salt and granulated sugar. Knead the dough from the resulting mass. Put it in the cold for a quarter of an hour. After the time has passed, take out and roll out using a rolling pin.

Put the cooled mixture of butter and flour in the middle of the rolled dough, cover it with the edges and fold four times. In this state, cool the dough again. Then roll out with a rolling pin in all 4 directions and fold again four times. Repeat these actions 2 times, and then make a dough from the test, the thickness of which is approximately equal to 0.5 centimeters. Divide it into squares of the same size.

Remove the nuts from the shell and peel them. The second will be easier to do if pre-doused with boiling water. After the procedures, dry the hazelnuts in the oven and chop finely. Then combine the nuts with the following ingredients: cognac, sugar, and egg. Mix everything well. The filling is ready.

Place 2 tablespoons of nut filling on the squares of the dough. Then fix their edges and grease with beaten egg yolk in advance.

Make cuts on the fixed edges of the pies, the distance between which should not exceed 1 centimeter. Then slightly open them so that the dish looks like scallops.

Preheat the oven to a temperature of 230 degrees. Put the pies on a baking sheet, which previously moisten with cold water, and send to bake for about 25 minutes. Walnut Scallops Pies Ready!
