Sift premium grade wheat flour into a bowl. Put salt, pour in table vinegar 9% and vegetable oil. Instead of vinegar, you can use vodka, grappa or other alcohol, as well as lemon juice. Vinegar or alcohol is needed to make the dough

stronger, more elastic, and finished products turned out thin with a crispy surface.

Bring the water to a boil and gradually, stirring, add boiling water to the flour. Stir with a spoon, and then, when the dough has cooled a little, but is still hot, knead it with your hands.

Roll a ball from the obtained custard dough, put on a table dusted with flour, cover with a bowl. While preparing the filling, leave the dough to ripen. It takes about 15 to 30 minutes.

To prepare the filling for custard pies, take white cabbage, peel the top leaves and finely chop it using a knife or a special grater. Pour two tablespoons of vegetable oil into a deep pan, put on medium heat, put cabbage in a pan and cover with a lid. Stew the cabbage, stirring occasionally, preventing it from burning, reducing the heat to a minimum after about 2 minutes from the start of the cooking process.

When the cabbage becomes translucent, add salt, spices, sugar and diced tomatoes, mix everything and simmer until soft. Remove from heat, cool.

Divide the dough into 22 slices, each roll on a flour dusted table into a thin cake with a diameter of about 10 cm.

Then everything is as usual: put about one tablespoon of the filling in the center of the tortilla and wrap the pie. In this case, we will give the pies a triangle shape, wrapped in the manner of Indian samosas. It is not necessary to seal the edges.

Put the pies on a dry baking sheet and bake at a temperature of 200 - 220 degrees for 15 minutes. Custard pies with cabbage filling can also be fried on both sides in a greased vegetable oil pan. Cover the pan with the lid. Fried pies are softer, unlike baked in the oven, which have a crispy crust.
