- 2 kg of young beef,

- 500 gr onions,
- 3 parsley root,
- 3 root celery,
- 1 medium lemon
- 200 g rye bread,
- 1.5 liters of bread kvass,
- cloves
- cinnamon,
- ground black pepper,
- black pepper peas,
- paprika,
- salt.
Cooking Method
Take meat, peel off the film, veins, cartilage, wash, beat well, sprinkle with salt, paprika and black pepper.
Peel onions and chop rings.
Fat bacon cut into very thin stripes.
Wash the lemon and cut into slices.
Finely chop the roots of parsley and celery.
In the roasting pan lay the pork fat, chopped onion rings, chopped roots, black peppercorns, cloves, cinnamon, sliced lemon with zest and a slice of brown bread.
Now you need to take the prepared meat, put it on top of the bread and pour 0.5 liters of bread kvass.
Cover the frypot, make a light fire and put it out.
It is necessary to ensure that kvass does not boil strongly and periodically pour it.
