  • - onion;

  • - 2 carrots;

  • - 50 g of flour and fat (you can use butter);

  • - 2 stalks of celery;

  • - 2 liters of water;

  • - half a cube of meat broth (or to taste);

  • - a pinch of nutmeg;

  • - dried cloves - 2 buds;

  • - salt to taste;

  • - parsley - 6-8 branches.

We wash the chicken well, remove excess fat. We clean the onions and carrots, remove the veins from celery, remove them to the side.

In a saucepan over low heat, melt the fat, add the flour, mix with a whisk. When the mass begins to foam, remove from heat. Let the flour cool a little, pour 2 liters of warm water into the pan. Mix thoroughly to completely dissolve the flour - there should be no lumps in the soup.

We return the pan to the fire, salt the broth to taste, add half the meat cube, carrots, 4 sprigs of parsley and celery. We stick 2 buds of cloves in the onion, put in the pan.

We transfer the chicken to the pan, bring to a boil and leave over low heat for 45 minutes - the finished meat should easily lag behind the bones, so the boiling time can be slightly increased if the chicken is large.

Filter the finished broth into a large bowl, discard the vegetables. Let the chicken cool a little, remove the skin and bones. We remove the chicken breast to the side, chop the rest of the meat with our hands and put it into the blender bowl. Add a little broth and grind the meat to a delicate cream.

We transfer the contents of the blender into the pan, pour in the remaining broth and mix until smooth. To make the texture of the soup as tender as possible, it can be additionally filtered through a colander or a sieve with a large mesh.

Season the soup with nutmeg, chop the chicken breast in equal strips and put it in the pan. We warm the soup, before serving, decorate with chopped parsley.
