  • - sunflower oil - 50 ml;

  • - turkey meat (fillet) - 250 g;

  • - onion - 250 g;

  • - salt, zira, ground black pepper, nigella - to taste

First of all, you should prepare the filling. To do this, take the turkey fillet: the lower leg is preferable, since the filling from the brisket will turn out less juicy. Cut meat into large cubes.

Add diced peeled onions. Season with mashed zira, ground black pepper and salt to taste. If desired, add a crumpled clove of garlic to taste.

Corn flour should be poured into a wide bowl, in which it will be convenient to knead the dough. For a glass, a capacity of 240 grams is taken. One and a half cups of cornmeal is approximately equal to 180 grams.

Add salt to the cornmeal and mix. Add mashed raw zucchini. The fruit can be grated on the smallest grater or mashed with a blender. Together with the zucchini, wipe a clove of garlic.

Pour the sunflower oil into this mixture and grind it into crumbs, which gather well in a lump. Now pour in very hot water and mix the ingredients quickly, getting a very tender corn dough.

Divide the dough into four equal parts. Roll each using a plastic bag or cling film. Parchment is also suitable for rolling dough, but with the help of parchment it will not be possible to form the product, so in this case it is not recommended to use this material.

Place the dough ball between sheets of polyethylene or cling film and carefully roll out using a regular rolling pin. You need to roll out quite thinly, about 2 mm. The dough is gluten-free or, otherwise, gluten-free, brittle, not elastic; it cannot be rolled out in the usual way.

Without removing the cake from the package, put a tablespoon with a slide of filling and, using the film on which the dough was rolled, blind the edges to get a ball. Put the pie on a baking sheet covered with parchment. All these actions must be done as carefully as possible, since the dough, which does not contain gluten, is completely non-elastic, easily breaks.

Sprinkle the top with nigella seeds, squeezing them a little in the dough, so as not to crumble.

Nigella, or, as it is also called, nigella - seeds of a beautiful annual garden plant with a colorful oriental aroma. It is not necessary to sprinkle samsa with nigella, but it is worth a try, since in combination with the scent of zira, this gives an unsurpassed result.

You can find nigella seeds for eating in oriental shops that sell spices and sweets.

Preheat the oven to 200 degrees Celsius. Place the baking tray with samsa on the middle tier of the oven and bake pies for 30-40 minutes. It is important that the meat is baked well.

When cooked, samsa is no longer fragile. Serve hot samsa without gluten and without casein with a salad of fresh summer vegetables.
