  • 1 cup (200 ml) kefir,

  • 3 eggs,

  • 1 teaspoon of baking soda

  • 6 glasses of flour (see the test, you may need a little more or less),

  • 3 tbsp. tablespoons of vegetable oil.

  • For filling:

  • 500 grams of minced meat (mixed or single species),

  • 300 grams of onion,

  • salt to taste

  • black pepper to taste,

  • red sweet ground pepper as desired.

Pour a glass of milk and kefir into a volumetric bowl, stir a little, beat three eggs, beat with a fork or whisk. Add half a teaspoon of salt, a teaspoon of sugar and a teaspoon of soda, mix thoroughly.

In small parts, add flour to the liquid mass. Knead soft dough (should not stick to hands). Pour three tablespoons of vegetable oil into the dough and continue to knead until smooth. Cover the bowl with the dough with a bag or a kitchen towel, set aside for the time of preparation of the filling.

For the filling, peel the onion (two and a half medium onions) and chop in a blender or grate, leave a small portion of the onion finely chopped. Mix onion with minced meat, salt and pepper.

Divide the dough into several pieces. Divide each piece into pieces. Roll a slice of dough into a cake. In the middle of the tortilla put a serving of minced meat and form a whitish. Bend the edges of the dough to the center. Sculpt the ends of the dough to the curved edges, leave the middle open. Form all the whites.

Pour oil into the stewpan so that the whites are immersed in it by half. Heat oil over medium heat. Put the whites in the oil face down. Fry until golden brown, then turn over. For greater juiciness, pour hot vegetable oil or broth in the middle of the belyash (in the stuffing). Fry under the lid.
