Steamed viburnum in Russia was considered a treat. There are several ways to soak a berry.

Separate the berries from the twigs, rinse well in running water and put in a clay pot, in a cast iron or enamel pan.

Add honey at the rate of 4 tablespoons of honey per pound of berries (1/2 and 1/3 of the berries weight), fill with two glasses of water, close tightly with a lid.

Put the container on a slow fire and soak for 10-12 hours, it can take longer. Of course, it is better to soar in a Russian stove, which optimally holds the temperature.

There is another way. Put the washed berries in a clay pot, add a little water, not more than half a glass.

Close the lid tightly and soak for 2–3 hours over low heat, stirring the berries periodically. Then rub the viburnum through a large sieve and transfer again to the pot.

Add 4 tablespoons of honey or 2 tablespoons of sugar. Pour in two glasses of hot water and steam for another 8-10 hours.

Make boiled viburnum stuffing for pies. Cook the jelly. To do this, dilute a glass of fresh berries with two glasses of water. Pour the starch or agar-agar powder into the liquid and bring to a boil. A cooled drink helps well with hypertension, with a stomach ulcer and duodenal ulcer.

Steamed viburnum does not have a characteristic bitterness, and so cook compotes, preserves, and add to cakes and pastries.

Fresh viburnum can be consumed without any processing with the addition of sugar, honey or cinnamon. Cook from it and juices. Grind one glass of berries and 100 grams of people (12-16 cubes) with a blender and add no more than a tablespoon of sugar.

The fruits of viburnum are used in dietetics, they have a beneficial effect on cardiac activity, enhance heart contraction, and are used as a multivitamin, tonic. Berries of viburnum taste bitter, but frozen acquire a sour taste. By the way, of all the berries, viburnum is almost the only one that has a bitterness, which is typical for good coffee and strong tea. Viburnum is harvested when the berries become soft after the first frost. This is approximately the end of October - November.
