Need to prepare a dressing for rice. Take Japanese vinegar, add some sugar to it. For 2 cups of rice - 50 ml of vinegar. Pour rice and mix thoroughly. To completely soak the rice, you can spread it on several plates and then fill it with rice dressing.

While the rice is cooling, chop the fish. Cook the salmon filet. Use the angled slicing technique. Take a very sharp knife and in one arcuate movement towards yourself cut the fish. In no case should you cut fish. If the fish is not very dense, then cut the piles thicker.

Pour in a cup of water and add a little vinegar. Mix well. Dip your hands in vinegar to prevent rice from sticking. Take a little rice in one hand, squeeze slightly, giving it an oval shape. Take a piece of fish in the other hand.

Without putting rice and fish, take a little wasabi with your index finger and spread a piece of your fish. Next, put rice. With your thumb, gently press the rice on top, leaving an almost imperceptible dent. Now change hands and push on the entire surface of the rice, giving it the correct shape. Sushi "nigiri" ready.
