  • - 200 g of fish fillet;

  • - 1 glass of boiled rice;

  • - 3 heads of onions;

  • - 100 g of cheese;

  • - salt.

Siberian fish pie

First of all, make yeast dough. To do this, dilute the yeast with a small amount of warm milk, add granulated sugar, pour in a little warm water, add flour, softened margarine and eggs. Knead the dough until it sticks to your hands and work surface. Sprinkle the dough prepared in this way with flour, cover with a napkin and place in a warm place to rise. The volume of the test should increase no less than 1.5-2 times. The time it takes for the dough to rise depends on the quality and quantity of the yeast, as well as the temperature conditions.

Clean, gut the fish, rinse thoroughly under running water and carefully separate the fillets from the bones. Salt it well, pepper and set aside for half an hour. Peel, wash and chop finely. Next, divide the yeast dough into 2 unequal parts, roll one (the one that is larger) on a flour dusted working surface into a layer about a centimeter thick and transfer to a greased baking sheet. Sprinkle with a portion of the onion, then put the fish fillet, on top - bay leaf and evenly spread the remaining onion. Cover on top with a second layer of dough, previously rolled, connect and pinch the edges so that the filling does not fall out. Poke the middle of the pie with a knife and put in a preheated oven to bake for 45 minutes at a temperature of 180 ° C. Then take out the finished fish pie from the oven, cover it with a damp cloth and let it sit for 5-7 minutes.

Quick fish pie

Sift the wheat flour through a sieve and mix with eggs, sour cream and mayonnaise. Add vinegar slaked soda and salt. Mix well until smooth. You should get a dough that is reminiscent of sour cream in consistency. Pour half of the prepared dough into a refractory form. Then lay in layers chopped into small pieces of fish fillet, boiled rice and chopped onions. Pour the other half of the dough over the filling. Sprinkle with grated cheese on top and put the fish cake in an oven preheated to 180 ° C to bake until cooked, for about 40-60 minutes.

If the dough for the pie is kneaded with baking yeast, add 1-2 tablespoons of lemon juice, as a result of which the yeast smell disappears.

So that during processing the yeast dough does not stick to your hands, it is recommended to spread your palms with melted butter or vegetable oil.
