You will need

    • 1 kg. liver
    • 3 large onions
    • 2 large carrots
    • 200 gr. butter
    • salt
    • pepper.

Take the liver. If you have a beef or pork liver, remove the film from it. Wash well and cut into pieces convenient for frying. Remember to carve white veins. If you have chicken liver, just rinse well. Salt and pepper in a bowl.

Fry the liver on both sides in vegetable oil, pre-roll it in flour. Transfer to a deep bowl.

Finely chop the onion, rub the carrots on a coarse grater. In the same pan where the liver was fried, first fry the onions, and then add the carrots. Stew all together for 5 minutes. Cool and add to the fried liver.

Take a blender and gently beat the liver with carrots and onions. You should get a homogeneous mass.

Add the softened butter to the paste and beat well with a blender again. Taste it. If there is not enough salt or pungency, then add spices. If desired, finely chopped greens can be added.

Put the prepared paste in storage jars with lids. Keep it in the refrigerator. Bon Appetit!

Pork liver must first be soaked in water for 2-3 hours to remove the bitterness.

If you do not have a blender, then you can replace it with a meat grinder. Scroll all the ingredients 3-4 times through a meat grinder.
