Traditionally, beets on our table are usually used as a component in all kinds of salads or first courses. This is a vinaigrette, and herring under a fur coat, and borsch, and beetroot. But there are still ways to cook beets, which are quite rare - this is baking or steaming. Although, in comparison with all the classic cooking methods, these methods are the most useful. Because when baking and steaming, the loss of nutrients is minimal, and the taste of the vegetable is very well preserved. And with nutrients and valuable minerals, beets are simply, if I may say so, “crowded”: it contains vitamin C, beta-carotene (vitamin A), fiber, iron, magnesium, phosphorus, copper, potassium, and folic acid. Useful properties of beets are used in the treatment and prevention of many diseases, such as diseases of the digestive system, liver, stroke, cataract, asthma.

You will need

    • 4 small beets
    • 2 carrots
    • 1 onion
    • 2 eggs
    • 50 g cheese
    • parsley
    • sour cream 100g
    • 1-2 tablespoons of breadcrumbs
    • butter
    • vegetable oil
    • salt
    • spices to taste. Steam cooker or steamer in a pan.

Wash the beets thoroughly. Without peeling, steam it. Peel the boiled beets. Remove the middle of the pulp with a teaspoon to make a “basket” of beets.

Grate carrots on a fine grater, fry in vegetable oil. Fry finely chopped onions separately. Peel hard-boiled eggs, chop finely. Finely chop the parsley. Mix carrots, onions, eggs, parsley in a separate bowl - this will be minced.

Fill the prepared beet baskets with minced carrot. Sprinkle each beetroot with crackers and grated cheese.

Bake over medium heat in the oven for 10-15 minutes. Serve with sour cream.

Useful advice

Instead of eggs, you can add boiled rice to the minced meat.
