Semolina Omelet
Ingredients:
- 0.5 l of milk;
- 8 chicken eggs;
- 200 g of semolina;
- 120 g ghee;
- 4 tbsp Sahara;
- 1/4 tsp salt.
Pour the milk into a small saucepan or stewpan, place on the stove and heat over medium heat, not boiling. Pour sugar into it and stir in the white liquid until it is completely dissolved. Dip there 20 g of melted butter, drop a pinch of salt and pour in small portions semolina with constant stirring. Wait until the porridge thickens well for 10-15 minutes, put it in a deep plate and cool to a warm state.
The omelet will turn out to be more uniform and beautiful if you beat the yolks and proteins separately, and then combine them into one mass.
Beat the eggs in a bowl and beat them thoroughly. Vigorously stir the egg mixture into the semolina and add another 20 g of oil. Melt the remaining oil in a pan, transfer the prepared mass to it and cook it at medium temperature until a dense golden crust forms from below. Gently turn the “pancake” with two wide shoulder blades and fry the semolina omelet until ready. Remove it from the heat, cut into pieces or mash with a spoon, sprinkle with sugar and serve.
