First, prepare the biscuit. Beat eggs with sugar until foamy. In a separate bowl, mix the jam with soda, when the jam begins to foam, carefully add beaten eggs to it and gradually add flour. To prevent the dough from settling, mix very carefully.

Put the finished dough in the form on baking paper and bake in the oven preheated to 160 ° C for about 30 minutes. The exact cooking time depends on the oven and the form in which the dough is baked. The main thing is to periodically pierce the dough with a toothpick or a special stick, checking if the biscuit is too dry.

To prepare the cream, take 600 ml of milk, mix it with sugar and place on the stove. In a separate bowl, mix 100 ml of milk, yolk and flour, getting a liquid "dough", a texture similar to pancake. When the milk boils on the stove, gradually pour a mixture into it with a thin stream, stirring continuously. Remove the thickened cream from the stove and set to cool.

When the biscuit is ready, remove it from the mold. After cooling, cut the biscuit into cakes, grease them with the prepared cream and lay in layers. Decorate the cooked biscuit with any fruit, chocolate or nut crumbs.

If you want to make a biscuit roll, immediately after you take out the finished biscuit from the mold, grease it with a thick layer of cream, roll the roll and leave it to cool in this form. Then the biscuit will retain its shape and will be well saturated with cream.

You can also make a sponge cake with jam filling. To do this, take:

- flour - 300 g;

- sugar - 200 g;

- chicken egg - 8 pcs.;

- lemon zest - to taste;

- jam to taste.

First separate the whites from the yolks. Be careful, the yolk should not get into proteins, otherwise the latter will not beat well. Mash yolks with white sugar, add lemon zest to them. Mix the yolks with flour. Beat the whites separately until a firm foam is formed (to make it easier for yourself, it’s better to cool the whites first).

Gently mix the whites and yolks with flour until a uniform dough is formed and pour into the mold. Place the biscuit in the oven, preheated to 170 ° C. Bake the dough for about 40-45 minutes. Soak the finished sponge cake with your favorite jam, folded in layers or curled in a roll.
