How to cook kebab sauce

The general principle of preparation - everything should be in moderation. Do not try to make such a sauce as spicy or too concentrated. Remember that it should sound like a “second violin”, in no way interfering with the “first part” - actually, a barbecue.

Another important point in the preparation of shish kebab sauce is its density. The ideal is the consistency of sour cream - i.e. when dipping a piece of meat, the sauce does not drip from it. Achieving this density without the use of starch or other thickeners is not an easy task. But if you want to enjoy a healthy meal - kebab sauce is best done without them.

Kebab Tomato Sauce

The ingredients you will need:

- 1 kg of tomatoes;

- 400 g of sweet pepper;

- 300 g of onions;

- 50 g of vegetable oil;

- 50 g of cilantro;

- 30 g of garlic;

- 6 g of salt;

- 2 g of hot red ground pepper;

- 2 g of crushed allspice.

Cooking tomato sauce for barbecue

Pour the tomatoes over with boiling water and immediately place them in a container of ice water. When preparing tomato sauce for barbecue - this is the easiest and fastest way to peel them. Grease the pepper with vegetable oil, salt and bake in the oven until soft. Remove the peel and stalk from the pepper (if you want to make a more piquant tomato sauce, you can leave the seed nest). Grind with tomatoes, chopped onions, spices and remaining oil in a blender. Cook the kebab sauce to the desired density. Season with chopped cilantro.

Sweet and sour kebab sauce

The ingredients you will need:

- 300 g of tomatoes;

- 300 g of plum jam;

- 300 g of onions;

- 150 g of lemons;

- 100 g of vegetable oil;

- 4 g of salt;

- 4 g of fresh ginger;

- 2 g of star anise;

- 2 g of ground cinnamon;

- 1 g of ground cloves;

- 1 g of crushed pepper with peas.

Cooking sweet and sour kebab sauce

Peel the tomatoes as described in the tomato sauce recipe. Bake the peeled and chopped onions, seasoning them with salt and ground cloves. Blend with tomatoes, add vegetable oil, spices and lemon juice. Boil the mass of future sauce to half the original volume, then combine with plum jam. Keep on fire for about 10 minutes. If the sweet and sour kebab sauce is very thick - pour a little boiled water. It is easy to compensate for excess sweetness by adding a little more lemon juice.
