Classic Tartar Sauce Recipe

To make a classic tartar sauce at home, you will need:

- 2 boiled yolks;

- 1 raw yolk;

- 120 ml of olive oil;

- 100 g of green onions;

- 1 clove of garlic;

- 1 pickled cucumber;

- 1 tbsp. l olives;

- juice ½ lemon;

- ground pepper;

- salt.

Mash boiled yolks and mix with raw yolk. Add ground black pepper, salt and freshly squeezed lemon juice. Combine all the components well and, stirring continuously, pour in a thin stream of olive oil. By its consistency, the sauce should be like thick mayonnaise. Wash the green onions, dry and chop finely. Peel the garlic clove and pass through a press. Grind pickles and upholstery with a knife. Then add all prepared ingredients to the yolk mass and mix thoroughly. To make the sauce more tender and uniform, mix the ingredients with a blender.

Tartar is a universal sauce that is served with meat, fish and vegetable dishes, as well as seafood, but you can cook tartar especially for fish. For him, you need to take:

- 2 boiled yolks;

- 1 raw yolk;

- 2/3 cup of olive oil;

- 2 tbsp. l sour cream;

- 2 tbsp. l capers;

- 1 tbsp. l mustard;

- 2 tbsp. l chopped pickled cucumbers;

- 1 tbsp. l lemon juice;

- 1 tsp dill greens;

- ground pepper;

- salt.

Wipe the boiled yolks on a grater, add raw yolk to them and mix well. Add mustard (it is better to choose Dijon) and lemon juice (if desired, you can replace it with white wine vinegar). Stir everything and whisk the resulting mass with a whisk, pour in a thin stream of olive oil. Season the sauce with salt and pepper, add sour cream, chopped pickled cucumbers, chopped dill and chopped capers. Mix all components well.

Homemade Tartar Mayonnaise Recipe

Making homemade tartar sauce is very easy. For him you will need:

- ½ cup mayonnaise;

- 1 pickled cucumber;

- 1 bunch of dill.

Grate pickles on a fine grater. Wash the dill thoroughly, dry it and chop it with a knife. Combine the cucumber with dill and mix well with mayonnaise.

Ham Tartar Sauce Recipe

To make ham tartar sauce, you need to take the following products:

- 1 tbsp. l grated horseradish;

- 1 tbsp. l finely chopped ham;

- 1 tbsp. l olives;

- 1 tbsp. l grated cucumber;

- 1 tbsp. l sour cream;

- 1 tbsp. l mayonnaise;

- ground black pepper;

- salt.

Mix finely chopped ham, cucumber and olives with grated horseradish, add sour cream and mayonnaise. To obtain a sauce of a more delicate consistency, grind the whole mass in a blender to a puree state. Then add salt and ground pepper to taste. Mix well. Serve ham tartar sauce with aspic and cold dishes.
