Cook the dough. Combine sugar with honey, add 1/4 cup of water, mix and bring to a boil. Pour flour into hot syrup, mix quickly to make a thick mass.

Remove from heat and let cool. Next, put softened butter in the honey mixture. Mix soda with 1 tablespoon of flour and pour into the dough, enter the grated lemon zest.

Knead well. The dough should be soft. Roll the gingerbread dough into a 1 cm thick layer, cut out butterflies from it and lay them on a baking sheet greased with vegetable oil.
