So, the list of ingredients is as follows: 2 tbsp. wheat flour, 2 tsp soda, 2/3 cup sugar, 1 tsp cinnamon, 1/2 tsp salt, 1/2 tsp nutmeg, 3/4 tbsp. applesauce, 1/4 tbsp. vegetable oil, 3 tbsp. grated or chopped carrots, 3 eggs, 20 grams of powdered sugar.

Sift the flour using a large sieve. Add sugar, cinnamon, soda, nutmeg and salt to the bowl. In another bowl, carefully grind applesauce, butter, and eggs. Combine the flour and apple mixture, stirring continuously. Then add grated carrots to the mixture and mix again.

Cinnamon goes well with apples. It helps to reduce blood sugar, increase insulin activity. Cinnamon helps the body's cells absorb and use glucose.

Preheat the oven to 180 ° C. Put the resulting dough in a greased form and put in the oven. Bake a cupcake for 25-30 minutes. Use a match or a wooden toothpick to check readiness. If the toothpick comes out of the cake clean and dry, then it is completely ready. Remove the cupcake from the oven, put on a dish and sprinkle with powdered sugar.

The following diet recipe is characterized by lack of eggs and plenty of fiber. Ingredients: 1 tbsp. sugar, 2 tbsp. flour, 1 tsp vanilla sugar, 1/2 tbsp. oatmeal, 1 carrot, 2 apples, 2 tsp baking powder, 1/3 tsp salt, 1-2 tsp cinnamon, 1 tbsp. kefir or yogurt, 1/3 tbsp. flavourless vegetable oil, 2 tsp lemon juice, zest of half an orange (optional).

As additional components of the apple-carrot cake, you can use crushed walnuts, raisins, honey and candied fruits.

Sift the flour into a large bowl and mix it with baking powder, oatmeal, salt, sugar and cinnamon. Wash and peel the carrots, apples. Rub them on a fine grater. If the carrots are too juicy, squeeze the juice. Pour the grated carrots and apples into the flour. Pour in kefir, oil, lemon juice, vanilla extract and mix everything thoroughly until smooth. To do this, use a special spoon or spatula. It is important to mix everything by hand: without using a mixer. Grease a baking dish with oil and sprinkle with flour. Shake off excess. Or use oiled cooking paper, then you don’t have to tear the cupcake off the mold. Transfer the dough into a mold and flatten. Place in a preheated oven. Bake a cupcake for 20-25 minutes.

The dough for any cake needs to be kneading very quickly, otherwise it will not rise in the oven. During baking, do not move the mold for the first 15 minutes so as not to disrupt the structure of the dough. The oven must be heated evenly, otherwise the cake will be baked only in parts.
