You will need
- 2 large eggplants;
- 1 red sweet bell pepper;
- 1 medium onion, chop finely;
- 200 g of tomatoes in their own juice;
- 1 tsp dried ginger;
- 2-3 cloves of garlic;
- a pinch of chili;
- cilantro, parsley, dill;
- half a teaspoon of turmeric;
- a pinch of sugar;
- 2 tsp lemon juice or apple cider vinegar;
- vegetable oil (2 tbsp.: one - grease vegetables, the second - to heat spices);
- salt, pepper - to taste.

Cut onion, pepper, eggplant in small pieces and, greased with oil, bake on the grill in the oven until the "dark skin". Peel the vegetables from the peel and transfer to a blender.

Grind vegetables in a blender by adding tomatoes and roots.
Add vinegar.
Warm up the spices in a small amount of oil in a pan (3 minutes). We shift the chopped vegetables to spices, salt, pepper, simmer over medium heat for 10 minutes.
