  • - 500 g of shrimp;

  • - 1 medium onion;

  • - 50 g of hard cheese;

  • - 2 eggs;

  • - 50 g of flour;

  • - 1 bunch of parsley;

  • - salt to taste;

  • - pepper to taste.

  • To prepare the sauce you will need:

  • - 250 g of tomatoes;

  • - 1 small onion;

  • - 150 - 200 ml of dry white wine.

Peel and fry the shrimps in vegetable oil. Then put them on a plate. In the same pan, fry the onions to a translucent state, mix it with shrimps, boiled eggs, finely chopped parsley and grated cheese on a coarse grater.

Mix everything thoroughly, pepper, salt. Boil squids (preserving the integrity of the carcass) and stuff with the resulting mixture, gently tamping. The edges can be fixed with a toothpick if necessary. Roll the squid carcasses in flour and fry until golden brown.

Make the sauce. Fry the onion in vegetable oil, gradually pour the wine. While the wine is boiling, free the tomatoes from the skin and seeds, cut the flesh into small cubes. Put the chopped tomatoes in a pan with wine and onions. Stew for 10 minutes.

Then salt and pepper the sauce, add water and leave to simmer for 20 minutes, stirring occasionally. After 20 minutes, put the stuffed squid on the sauce and simmer for another 5 minutes. Serve hot to the table.
