It turns out to be very tasty pasta from Japanese noodles - udon (from wheat flour) or event (from buckwheat flour). One of the main components of the paste is its filling. Vegetarian filling is prepared from a variety of vegetables. Vegetables are fried in combination with spices or cooked as a sauce using a blender.

Pasta with tomatoes and eggplant

You will need: pasta or spaghetti - 300 g; salt - 1/2 tsp; tomato - 2 pcs.; eggplant - 200 g; dill or parsley - 30 g; vegetable oil - 1/2 tbsp. l.; olive oil - to taste; spices: asafoetida, black pepper, coriander - to taste.

Wash the tomatoes and eggplant. Cut the vegetables into small cubes. Heat the pan, add vegetable oil. Fry the spices for a few seconds until aroma appears. Put chopped eggplant in a pan. Sauté the eggplant over medium heat for about 5 minutes.

Finely chop the greens. Place the tomatoes to fry in the eggplant. When the tomatoes are soft, add the greens and bring the vegetables to a cook.

Cook the pasta in salted water. Put the prepared pasta on the plates. Season to taste with olive oil. Put ready vegetables on top and serve.

Pasta alfredo

You will need: spaghetti - 200 g; vegetable oil - 1/2 tbsp. l.; spinach - 100 g; avocado - 1 pc.; pine nuts - 1/2 tbsp.; parsley - 10 g; lemon juice - 2 tsp; pepper 1/4 tsp; asafoetida 1/4 tsp; salt 1/8 tsp

Boil pasta or spaghetti in salted water. Do not drain the water in which the pasta was boiled, leave 1/2 cup of water. Heat the oil in a frying pan. Sauté the asafoetida until you smell it. Then add spinach to the pan. Fry the spinach until the leaves are soft. You can use frozen spinach.

Wash and clean the avocado, remove the stone. Place the avocado, sauteed spinach, parsley, pine nuts in a blender bowl. Add some water in which the pasta, lemon juice, pepper and salt were cooked. Grind until mashed. Mix the prepared pasta and the resulting mashed potatoes, heat in a pan. Arrange on plates, garnish with pine nuts.

Pasta with tofu and vegetables

You will need: tofu - 250 g; carrots - 1 pc.; bell pepper - 1/2 pcs.; noodles - 200 g; sesame seeds - 2 tbsp. l.; soy sauce - 3 tbsp. l.; vegetable oil - 1/2 tbsp; salt to taste; ground black pepper, coriander, cumin - to taste.

For this recipe, buckwheat noodles, soba, are ideal. But you can use any other. Pour purified water into the pan, put the noodles to boil. Cut the tofu into small pieces. Marinate it in soy sauce.

Meanwhile, chop the carrots and peppers into long, thin strips. Heat vegetable oil in a pan and fry spices in it - black pepper, cumin and coriander. You can use any spices you like.

Fry chopped carrots and peppers in hot oil with spices. When the vegetables are slightly fried, add tofu to the pan. And then the finished noodles. Stir the pasta and pour some soy sauce in which the tofu is pickled. Remove the pan from the heat.

In another dry pan, saute the sesame seeds for 1 minute. Arrange the noodles in plates, garnish with sesame seeds.
