You will need
- For 4 servings:
- - 450 g canned pineapple in its own juice;
- - 100 g of red currant jelly;
- - 2 tbsp + 2 tsp Dijon mustard;
- - 0.75 tsp salts;
- - 1 tbsp lemon juice;
- - 450 g pork tenderloin.

If pork has fat, it must first be cut.

Preheat the oven to 200 degrees. Pour the juice from canned pineapples into a small saucepan.

Mix pineapple juice with redcurrant jelly, 2 tablespoons of mustard and a quarter teaspoon of salt. Put on medium heat and warm, stirring, for 5 minutes: the jelly should disperse, the mixture should become homogeneous. Cool and set aside 2 tbsp. To lubricate the oil during baking.

Put the meat on a baking sheet, pour lemon juice and sprinkle with the remaining 3/4 tsp. salt. Spread the meat with 2 tbsp. glaze and send to the oven for half an hour, lubricating with glaze every 10 minutes.

Cut pineapples into pieces and mix with 2 tsp. Dijon mustard.

When the meat is ready, let it stand for 10 minutes, and then cut it into pieces. Put a mixture of pineapple with mustard on warmed plates, meat on top and pour everything with warmed sauce.
