Millet is a very useful and nutritious cereal, but not everyone likes millet porridge. To beat off the characteristic smack of millet, many housewives come up with all kinds of recipes for dishes with various additives. Millet muffin with carrots and fried onions is a hearty and tasty dish that even children enjoy with pleasure. Delicate yogurt sauce gives it a special piquancy and softness. This cupcake can be used as an independent dish, and offered as an original side dish for meat, poultry or fish.

You will need

  • - 1 large onion;

  • - 1 large carrot;

  • - 300 grams of millet;

  • - 2 tablespoons of vegetable oil;

  • - 500 ml of vegetable broth or water;

  • - 100 grams of hard cheese;

  • - 200 grams of soft low-fat cottage cheese;

  • - 2 eggs;

  • - oil to lubricate the mold;

  • - breadcrumbs;

  • - 2 tbsp. tablespoons of a dried mixture of aromatic herbs (to taste), salt;

  • - 300 grams of creamy yogurt for sauce.

Rinse millet, pour boiling water for 5 minutes, then place on a sieve and let the water drain completely. Peel and wash the onions and carrots, finely chop the onions, grate the carrots on a coarse grater. Coarsely grate the cheese.

Heat vegetable oil in a frying pan, fry the onion until golden, add millet and broth (water), bring to a boil and simmer for 30 minutes under the lid over low heat. Chill for an hour.

Separate the yolks from the proteins. Yolks, cottage cheese, grated cheese and carrots, as well as 1 tablespoon of aromatic herbs and salt to taste, add to the millet with onions and mix. Beat the whites in a strong foam and gently mix with the bulk.

Preheat the oven to 200 degrees. Grease a baking dish with any oil, sprinkle with breadcrumbs. Put the form in the oven to an average level, bake a cupcake for 1 hour. Chill, then remove from the mold and cut the cupcake into portions.

To prepare the sauce, beat yogurt, add salt, pepper, aromatic herbs. Or, as an option, finely chopped dill, green onions, garlic, crushed in a press. Serve the sauce for millet cake.

Useful advice

This cupcake can also be prepared in a slow cooker: grease the bowl with butter, put the millet mixture and cook for 60-70 minutes in the "Baking" mode. After completing the program, remove the bowl from the multicooker, cover with a towel and let the dish stand for 1-2 hours. Then turn the bowl over, substituting a large dish. The cupcake is ready!
