It’s not good to fry fish, although this is not easy, you also need to prepare an excellent sauce for it. With it, even the most ordinary pollock will turn into a real culinary fantasy, and all this without any special gourmet ingredients.

  • For sour cream sauce:

  • - 200 g of 20% sour cream;

  • - 1 pickled or pickled cucumber;

  • - 1 tsp grated lemon peel;

  • - 2 cloves of garlic;

  • - 20 g of dill;

  • - salt;
  • For potato sauce:

  • - 3 potatoes;

  • - 4 cloves of garlic;

  • - 120 ml of olive oil;

  • - 30 ml of white wine vinegar;

  • - salt;
  • For cream cheese sauce with mushrooms:

  • - 5 medium champignons;

  • - 1 onion;

  • - 200 ml of 10% cream;

  • - 100 g of blue cheese, for example, dorblu;

  • - 60 g of butter;

  • - 1/2 tsp freshly ground black pepper;

  • - 1/3 tsp nutmeg and dried thyme;

  • - salt;
  • For tomato sauce:

  • - 500 g of tomatoes;

  • - 120 ml of water;

  • - 1 chili pepper;

  • - 20 g of cilantro;

  • - 1 tsp ground coriander;

  • - 3/4 tsp salts;
  • For lemon sauce:

  • - 200 ml of vegetable oil;

  • - 50 ml of lemon juice and white wine vinegar;

  • - 2 tsp Sahara;

  • - 1 tsp salts;

  • - 1/2 tsp mixture of peppers.

Prepare a tender sour cream sauce for fried fish. Cut the cucumber into small pieces or grate it. Peel the garlic cloves and grind in a mortar or special press. Finely chop the dill, first saving its branches from thick stems. Put vegetables and herbs in sour cream, season with dried or fresh lemon zest, salt and beat well with a whisk.

Make original fried fish potato sauce. Carefully wipe the potatoes from dirt, dip in boiling salted water and boil them in their skins until cooked. Let the root crops cool, gently peel the peel and crush the tubers with a blender or a blender so that there are no lumps. Unhook the garlic, crush it in any way into the pulp and add in the puree. Dilute it with a mixture of olive oil and vinegar and add to taste.

Stew a delicious creamy cheese sauce with mushrooms for fried fish. Pour the oil from the pan in which the fish was fried into the saucepan and put on moderate heat. Remove the “shirt” from the onion, cut it into cubes and fry until golden. Cut the mushrooms lengthwise into plates, mix in the onion and cook for another 5-7 minutes. Gradually put in the butter, cut into pieces, cream and noble cheese. Stew the sauce until it acquires a viscous consistency. Then sprinkle it with pepper, nutmeg, thyme and salt as much as needed.

Cook spicy tomato sauce to fried fish. Put the quarters of the tomatoes in a saucepan, pour in the water and bring to a boil over high heat. Then reduce the temperature to a minimum and simmer the vegetables for 15 minutes. Cool the resulting semi-liquid mass and wipe it through a fine mesh sieve. Scrub the chili pepper from the seeds, grate, rub with coriander and salt and mix with tomato paste. Pour in the same chopped cilantro and a little more salt if it is not enough.

Combine lemon juice with vinegar in a glass jar for simple lemon sauce to fried fish, pour salt with sugar and peppers and leave it under the lid until the bulk products dissolve. Pour vegetable oil into the dishes, close tightly and shake several times.

Useful advice

Instead of wine vinegar, you can take dry white wine, the sauce will be more piquant.

Soak the sauce for fried fish for at least half an hour in the refrigerator, after insisting it will turn out to be even more saturated in taste and aroma. The exception is a creamy cheese sauce with mushrooms, it must be served still hot.
