Tomatoes, cucumbers and sweet peppers are a classic combination for a summer vitamin salad. This trio can be supplemented with original sauces, cheese, herbs and other additives to diversify the dish.

Try making a salad of tomatoes, cucumbers, peppers and feta cheese. To make this traditional Bulgarian dish tasty, choose ripe meaty tomatoes with a sweetish taste.

You will need:

- 2-3 small strong cucumbers;

- 1-2 sweet peppers;

- 3 tomatoes;

- 70 g of feta cheese;

- 50 ml of vegetable oil;

- 1 teaspoon of lemon juice;

- salt to taste.

Wash and dry the vegetables. Cut the tomatoes into slices, cucumbers into rings, and pepper into strips. Finely chop the feta cheese. In a deep bowl, mix the vegetables, pour them with oil and freshly squeezed lemon juice, add salt. Sprinkle the lettuce crumbs on top of the salad. Serve the dish on your own or as an accompaniment to fried meat, fish and sausages.

Shopska salad can also be prepared without feta cheese - this option is often served at a lean table.

Salad with vegetables and beans

If you prefer more nutritious snacks, add tomatoes and peppers with potatoes and canned beans. With this set of products, pickles will not be in harmony especially well.

You will need:

- 3 potatoes;

- 2 sweet peppers;

- 2 tomatoes;

- 2 pickles;

- 100 g canned white beans;

- a bunch of iceberg lettuce;

- 2 eggs;

- 100 g of natural yogurt;

- 1 teaspoon of sweet mustard;

- juice of 0.25 lemon;

- salt;

- ground black pepper;

- parsley.

Rinse and boil the potatoes. Cool it and peel it. For sweet peppers, remove seeds and septa. Scald tomatoes with boiling water and peel. Cut the pepper into strips, potatoes, tomatoes and pickles in thin slices. Tear the green salad into small pieces, mix with chopped vegetables and canned beans.

Make the sauce. Pour yogurt into a separate container, add salt, mustard, freshly ground black pepper and lemon juice. Mix everything well and fill the salad with dressing. Before serving, decorate the dish with circles of hard-boiled eggs and finely chopped parsley.

Eggplant salad

Include eggplant in the vegetable set. Their taste harmonizes well with garlic - the salad will turn out more spicy and spicy.

You will need:

- 2 eggplants;

- 2 tomatoes;

- 2 cucumbers;

- 2 sweet peppers;

- 2 cloves of garlic;

- olive oil;

- 1 teaspoon of vinegar;

- salt;

- freshly ground black pepper.

Salad cucumbers can be fresh or pickled.

Bake eggplant in the oven. Pour the tomatoes over boiling water and peel them. Remove the septum and seeds from the pepper. Dice eggplant, cucumbers, peppers and tomatoes, mix them with chopped garlic and season the salad with oil, vinegar, salt and pepper. Mix well. Serve fresh white or grain bread for the salad.
