Round grain rice is especially popular in the Far Eastern cuisine. It is used in the preparation of sushi, as well as a side dish for a variety of dishes. But in order for the rice to be cooked in the best way, it is necessary to observe the technology of its cooking.

  • - 1 tbsp. rice;

  • - 3 tablespoons rice vinegar;

  • - a pinch of salt.
  • For risotto:

  • - 2 tbsp. rice (round arborio rice is best);

  • - 3 tbsp. vegetable broth;

  • - 60 g of butter;

  • - 100 g of grated Parmesan cheese;

  • - 1 tbsp. dry white wine;

  • - 300 g of chicken;

  • - 2/3 Art. fat cream;

  • - dried rosemary and oregano;

  • - 1 onion;

  • - olive oil.

For sushi, rice should be sticky, keep in shape. Therefore, its proper preparation is especially important. Pour rice into a pan and rinse in 4-5 water. After that, fill it with cold water so that it has more rice by 2 fingers. Do not add salt to water. Put the pan on a strong fire, and then, when the water boils, reduce it to medium and cook the rice for 20 minutes without stirring. During this time, the water should evaporate. If necessary, you can add more water to the pan. Remove the finished rice from the stove and season with a mixture of vinegar, sugar and salt. Use still warm rice to make sushi and rolls. Rice cooked according to this recipe can simply be served accompanied by pieces of fish, seafood or a Japanese omelet.

For risotto, rinse the rice in running water. Peel the onion and cut into small cubes. Heat olive oil in a pan and fry onions in it for 4-5 minutes. Pour the broth into the pan and bring it to a boil. Pour rice into the pan and add the onion, mix. Salt the broth. Cook the rice for 10 minutes, and then pour the wine into the pan. As a result, the rice should become soft. Season the finished cereal with butter and add the parmesan to it. Cook the chicken separately. Cut the fillet into small cubes and fry in a pan in olive oil for 4-5 minutes until half cooked. After that, salt the meat, add fragrant herbs and pour the cream into the pan. Simmer on low heat for 15 minutes. Serve risotto with chicken and sauce. Sprinkle each serving on top with the remaining parmesan.

If round rice is indicated in the recipe, do not replace it with long-grain or wild. Each type of rice has its own properties - round-grain rice is usually more sticky and better suited for sushi and various cereals, and long-grain rice is most often more crumbly.

Useful advice

Even if the rice is burnt during cooking, do not discard it completely. Carefully remove the portion of rice that remains white from the pan. Do not scrape rice from the bottom - it will spoil the taste of your dish.
