Celery has a slightly bitter spicy taste and a specific aroma that add spice to the dishes. For the preparation of soups, celery must be prepared.

Rinse the vegetable thoroughly, peel and sprinkle a little with lemon juice so that the vegetable does not darken. For the preparation of soups, celery is chopped finely, this is how it will exude aroma. In the future, cook the root crop immediately in boiling water, so it will retain a large amount of vitamins.

Light celery soup

To prepare this soup you will need:

- 700 g celery;

- 1 onion;

- 20 g of butter;

- salt (to taste);

- water, vegetable broth;

Peel and chop onions in small cubes, put in a pan and fry on low heat until golden brown. Stir constantly. Then add the celery prepared in advance and also fry for about 5 minutes. Add ordinary boiled water or broth to the vegetable mixture and simmer for 30 minutes. You can judge the readiness by the fact that celery has become soft.

Take a blender and pour the prepared soup into it, whisk until smooth. Then pour back into the pan and heat. Light soup with celery is ready, it can be served at the table with cheese or croutons.

Smoked brisket soup

Celery soup can be not only vegetable, but also include meat ingredients. You will need:

- 500 g of celery (roots);

- 500 g of celery (petioles);

- 1 tbsp. cream

- 150-200 g of smoked brisket;

- chicken or vegetable broth (optional);

- vegetable oil;

- pepper, salt (to taste);

- a blender.

Finely chop the roots and petioles of celery, put in chicken or vegetable broth and cook for about 30 minutes. Cut the smoked brisket and lightly fry in a pan greased with vegetable oil.

Place the cooked celery with the broth in a blender and beat until pureed, then salt and pepper to taste, add cream. After that, heat the soup puree over low heat. Then pour into plates, in each put a few pieces of fried smoked brisket.
