Okroshka is called cold soup, which is prepared on the basis of kvass or kefir with the addition of crushed ingredients. The name of this dish comes from the word "crumble". Okroshka is very refreshing and gives energy. In hot times, it is perfect for snacks, as well as breakfast, lunch and dinner.

You will need

    • For apple okroshka on kefir:
    • 2 sour apples;
    • 3 cucumbers;
    • 10 pieces. radishes (or 1 radish);
    • a bunch of greens (onions and dill);
    • 2 eggs;
    • 1.5 liters of kefir;
    • mustard;
    • salt.
    • For apple okroshka with beetroot leaves:
    • 3 bunches of young beets with leaves;
    • 3 cucumbers;
    • 2 apples
    • 2 boiled eggs;
    • 2 tbsp. l chopped greens;
    • 1 tbsp lemon juice;
    • 1 \ 2 cups sour cream;
    • 1 liter of kefir;
    • salt.

Apple okroshka

Wash fresh cucumbers and radishes, dry and cut into small cubes. Wash the potatoes thoroughly and boil them in their skins. Then cool, brush and grate on a coarse grater.

Chop the green onion, add some salt and mash the onion with a spoon. It should become soft and give juice.

Boil hard-boiled eggs, cool and peel. Separate the whites from the yolks, chop the whites into small pieces, and grind the yolks with mustard.

Peel the apples from the skin and, removing the core, finely chop.

Mix the chopped green onions with potatoes and yolks, add the rest of the ingredients (proteins, cucumbers, radishes and apples) and mix everything thoroughly.

Pour the resulting mass with kefir, mix again, salt and cool if necessary. Sprinkle the okroshka before serving chopped dill.

Cucumbers and radishes (or radishes), if desired, can be replaced with other raw or boiled vegetables. For example, beets and carrots.

Apple okroshka with beetroot leaves

Separate young beetroot leaves from petioles. Wash and grate root vegetables thoroughly with a coarse grater.

Cut the petioles into cubes. Put everything in a saucepan, add lemon juice, pour hot boiled water and warm for 2-3 minutes with little heat. Remove from the stove, let the broth stand for 10 minutes and cool.

Straw the beetroot leaves and fresh cucumbers. Wash the apples, free from the core and chop. Hard boil the eggs, cool, peel and chop finely.

Add all the ingredients to the beetroot broth and pour in the kefir diluted with cold boiled water (0.5 l). Salt to taste.

Serve okroshka to the table with sour cream, sprinkled with chopped herbs (dill and onions).
